Aji Amarillo or Yellow Pepper, are from South America, typically Peru. Aji Amarillo chiles are yellow in color but change to orange as they mature. Aji Amarillo has a slightly fruity flavor and is traditionally used in many Peruvian salsas and ceviches, as an aji amarillo paste or aji amarillo sauce. Some peruvian recipes also use whole aji amarillo.
