Cuchuco Recipe | Receta Cuchuco

Cuchuco is a traditional thick soup from Colombia.

There are three different versions of Cuchuco; Cuchuco de Trigo (wheat), Cuchuco de Maiz (corn) and Cuchuco de Cebada (barley).

In all versions pork ribs or pork bones are used in the Cuchuco recipe.



Ingredients List:

  • 2 lbs Pork Ribs
  • 10 Cups Water
  • 1/2 Cup Soaked Wheat
  • 1 Cup Fava Beans
  • 2 Yellow Medium Potatoes, Peeled & Diced
  • 2 Red Potatoes, Peeled & Diced
  • 1 Large Onion, Chopped
  • 4 Garlic Cloves
  • 2 Scallions, Chopped
  • 1/2 Cup Cilantro, Chopped
  • 1 tsp Cumin
  • 1/4 Cup Red Pepper, Diced
  • 2 Cups Cabbage, Shredded
  • 1/2 Cup Peas
  • 1/2 Cup Carrots, diced
  • 1/2 tsp Sazón with Achiote
  • 1 Beef Bouillon Cube
  • 2 TBSP Flour
  • Salt & Pepper to Taste
  • Preparation:

    Place the onion, garlic, scallions, red bell pepper in the food processor.

    Place a pot over high heat. Add the water, beef bouillon, wheat, fava beans and pork ribs, bring to a boil. Reduce the heat to low. Add the onion mixture salt and pepper and let it simmer for 1 hour.

    Add the potatoes, cabbage, peas, carrots, cumin, sazón and flour. Cover and cook until the pork is cooked, about 30 minutes.

    Garnish with cilantro and serve.
