Llapingachos also known as Yapingachos, are Ecuadorian fried potato pancakes. They are traditionally stuffed with cheese.

Llapingachos are usually served with salsa de mani which is a creamy peanut butter sauce.

Ingredients List:

  • 1 1/2 lbs Russet Potatoes, Peeled & Quartered
  • 6 TBSP Queso Fresco or Monterey Jack Cheese, Shredded
  • 2 TBSP Green Onions, Minced
  • 3/4 Cup Tomato, Diced
  • 1/2 Cup Red Onion, Thinly Sliced
  • 2 TBSP Green Onions, Minced
  • Salt & Pepper
  • 1 TBSP Olive Oil

Preparation:

Place potatoes and 1 1/2 teaspoons salt in a saucepan, and cover with water. Bring to a boil, reduce heat and simmer until tender. Drain and mash until smooth. Cool.

Add cheese, onions, salt and pepper to potato mixture, Make small, golfball size, balls with the potato dough. Flatten balls into 1/2" thick patties. Place on a baking sheet, cover and refrigerate until firm.

Heat oil in a large skillet over medium heat. Cook the patties until golden browned on each side. Top patties with tomato and red onion.
