Chancaca is a syrupy sweet sauce made from raw unrefined sugar from sugarcane. It is primarily found in the countries of Peru, Bolivia and Chile.
It is used for popular Latin desserts such as sopaipillas and picarones peruanas. Peruvian chancaca is typically flavored with cinnamon and orange.

Ingredients List:
- 1 Cup Dark Brown Sugar
- 3/4 Cup Water
- 2 Ounces Chanaca or Panela
- 2 Cinnamon Sticks
- Peel of 1/2 Orange
- Peel of 1/2 Lemon
- 1 Teaspoon Whole Cloves
- 1 Teaspoon Aniseeds
Preparation:
Combine all ingredients in a small saucepan and let simmer over low heat until the syrup is quite thick.
Remove from heat and strain. Serve with picarones.
