Ingredients List:
- 10 Hot Red or Green Peppers, Seeded & Chopped
- 1 Cup Olive Oil
- 1/2 lb Spanish Fresh Cheese, Queso Fresco or Queso Blanco
- 2 lbs. Cassava (Yucca) Root, Peeled & Sliced
- 2 Hard Boiled Eggs, Sliced
- Black Olives
- Lettuce Leaves
- Salt & Pepper to Taste
Preparation:
Put the cheese, peppers and oil into a food processor and process until it is a heavy cream. Season to taste with salt and pepper.
Boil the cassava root (yucca) in salted water until it is tender, about 30 minutes. Drain and arrange the slices on a serving platter. Pour the sauce over the yucca while they are still hot.
Garnish the platter with the olives, eggs and lettuce leaves.
