Pisto is a traditional starter or side dish from Spain.
It is full of seasonal vegetables and quite flavorful. It is typically served over toasted bread and topped off with a fried egg, Spanish ham or Manchego cheese.
It resembles French ratatouille.

Ingredients List:
- 2 Onions, Finely Chopped
- 1 Green Pepper, Diced
- 1 Red Pepper, Diced
- 2 Zucchin, Diced
- 5 Tomatoes, Peeled & Seeded, Crushed
- 4 Cloves Garlic, Finely Chopped
- 1/2 Cup Extra Virgin Olive Oil
- Salt & Pepper to Taste
Preparation:
Heat the olive oil over medium heat in a large skillet. Reduce the heat to low and cook until the onion is translucent, about 8 minutes.
Add the bell peppers and zucchini and cook for 15 minutes, stirring often.
Add the crushed tomatoes. Season with salt and pepper.
Cover and simmer gently on low for about 1 hour.
Remove the lid, increase the heat slightly and cook until the liquid is evaporated, about 20 minutes.
Serve immediately with grated manchego, fried egg, slices of Serrano ham or toasted baguette slices.
