Huevos Pericos is a delicious Colombian and Venezuelan dish.
It is traditionally prepared with scrambled eggs, butter, sautéed diced onions, and tomatoes. Sometimes scallions are used as a substitution or as an addition to the onions, particularly in Colombia.

Ingredients List:
- 5 Eggs
- 3 TBSP Cream
- 2 TBSP Butter
- 1 TBSP Vegetable Oil
- 2 Tomatoes, Seeded and Chopped
- 1 Onion, Finely Chopped
- 1 Green Pepper, Finely Chopped
- Salt & Pepper to Taste
Preparation:
In a bowl whisk the eggs together with the cream and set aside.
Heat a large nonstick skillet over medium heat. Melt the butter with the oil.
Add the chopped onions to the pan and sauté over medium heat until they are translucent.
Add the tomatoes and green pepper and cook over medium heat until soft, about 8 minutes.
Pour the egg and cream mixture into the skillet, season with salt and pepper and cook gently, stirring them lightly and flipping them as they cook.
Serve warm with arepas
